Joan 2021 Pinot Noir

Harvest 2021 - A cool, wetter year has lead to great growing conditions (compared to the drought years previous), this lead to wines with finesse and structure. They shall age gracefully and will definitely do with extended cellaring.

2021 Pinot Noir - a mix of 3 clones, MV6, small amount of 115 and 114. Picked in one day with a range of ripeness between these clones, acid lines and more savoury elements. All fruit was completely destemmed and then approximately 15% stems added back to build complexity and structure. Left on skins for 6 weeks to create greater complexity and savoury elements. Aged in 50% new French oak, extra tight grain for slow maturation, the same type of barrel we use for the Chardonnay. Aged for almost 24 months until the tannin structure softened. 3 months in bottle before being released. 

Drink now to 10+ years.
