Most varieties are fermented separately and pressed immediately into a combination of stainless steel and larger format oak, including a 100-year-old oak Foudre (1600L). The wine aged until January 2026, spending time mostly in foudre before settling in stainless steel. At bottling, a small sulphur addition is made.
